Healthier Twix Bars
Ingredients:
For the Cookie Base:
- 1 cup almond flour
- 2 tbsp coconut flour
- 2 tbsp coconut oil (melted)
- 2 tbsp maple syrup or honey
- 1/4 tsp salt
For the Caramel Layer:
- 1/2 cup dates, pitted
- 1/4 cup almond butter (or peanut butter)
- 2 tbsp coconut milk (or water)
- 1 tsp vanilla extract
- 1 cup dark chocolate chips (or sugar-free chocolate)
- 1 tsp coconut oil
Instructions:
Make the Cookie Base:
- Preheat your oven to 350°F (175°C).
- In a bowl, combine almond flour, coconut flour, melted coconut oil, maple syrup, and salt. Mix until a dough forms.
- Press the dough into a lined 8×4 inch baking dish.
- Bake for about 10-12 minutes until lightly golden. Let it cool completely.
Prepare the Caramel Layer:
- In a food processor, blend pitted dates, almond butter, coconut milk, and vanilla extract until smooth. If it’s too thick, add a little more coconut milk.
- Spread the caramel mixture evenly over the cooled cookie base.
- Freeze for 15-20 minutes to set.
Coat with Chocolate:
- Melt dark chocolate chips and coconut oil in a microwave or double boiler until smooth.
- Cut the bars into rectangles, dip them in the melted chocolate, and place them on parchment paper. Drizzle extra chocolate on top if desired.
- Chill in the refrigerator until the chocolate hardens.

Healthier Reese’s Peanut Butter Cups
Ingredients:
For the Chocolate Shell:
- 1 cup dark chocolate chips (or sugar-free chocolate)
- 1 tsp coconut oil
For the Peanut Butter Filling:
- 1/2 cup natural peanut butter (or almond butter)
- 2 tbsp honey or maple syrup Pinch of salt
Instructions:
- In a microwave-safe bowl, melt dark chocolate chips and coconut oil until smooth. Stir until fully combined.
- Line a muffin tin with paper liners.
- Pour a small amount of melted chocolate into each liner, just enough to cover the bottom. Use a spoon to spread it up the sides slightly.
- Freeze for about 10-15 minutes until the chocolate hardens.
- In a bowl, mix together peanut butter, honey, and salt until smooth.
- Once the chocolate shell is set, add a spoonful of the peanut butter mixture on top of the chocolate.
- Pour the remaining melted chocolate over the top, ensuring the peanut butter is completely covered.
- Freeze again for about 20 minutes until set.
